This time I skipped the mushrooms, but I did add some sliced carrots.
And I thought I'd remove most of the seeds and membrane of the jalapeno in case someone didnt like it too spicy.
And of course my son says.......you should have added one more jalapeno. lol!!
Next time I will not take out seeds/membrane.
I think these noodles were different from the last time. I dont remember cooking them last time, just boiling the water turning it off and letting them sit.
This time I simmered for 5 min.
I think the noodles were labeled Pad Tai noodles.
Flat, and thick like fettechini

It was still yum.

after the soup, I made a lasagna from scratch. I semi cheated and used the oven ready noodles and the marinara was store bought so......You all know what I mean. I cant make ALL the ingredients! That would take days!

It came out GREAT!

Last night I boiled up some Barilla 3-cheese pasta, melted butter over it that I sautéed minced garlic in and sprinkled parmesan over it. Simple, simple, simple. And sooooo good!

I love top user the oven ready. I just make sure my sauce is a little thinner.

So tonight Ive not decided what to make for main course.
But for sure side of brussel sprouts. And thinking of trying my hand at roasted garlic.
Hub to a ton of it last time he went to costco.......so....ima try it.
(of course I may also need more french bread to spread it on......)

Glad i made an easy dinner last night, and glad for leftovers tonight.
Sort of like shepards pie type thing.
(hamburger, canned corn and mashed taters and cheese then baked for about 25 min to warm up and melt cheese)
Son loves this, and I like it too, plus its an easy meal.

Thinking I'll try another chicken pot pie tonight with that puff pastry dough.
It came out really yummy last time.
I used the little bowls to make it
I think this time Im going to use a 9x12 (approx) dish and make one large one.

Well skipped the pot pie. Might end up making it for Valentines day, or maybe tomorrow.
Hub got a Ravioli lasanga the other day. So we had that last night. Still have some left over too, so it might be a repeat tonight.


So is anyone else cooking?????

word of advice, dont bother with a chef boy-r-dee pizza crust mix. lol.
yuck. (or I thought it was yuck. Hub and son ate it.)
It did include the pizza sauce, which I didnt realize came with. Also some grated cheese (not great)
I added motzerella (spelling lol) some olives, mushrooms and sun dried tomatoes.
so the topping was good, but the dough sucked.
(it may have had a better texture if hub had not insisted on taking it out. I wanted to keep it cooking a tad longer due to all the toppings I had on it)


Either that, or next time I'll go just cheater mode and use english muffins like we did when we were kids.

I don't care for that brand either and I'm not sure how they call that cheese! Lol. Jiffy makes a decent crust though.

Yeah, I would not have bought it, except Ive never seen it before.
Truth, I basically pan fried the left over piece(s) for lunch for me. Not horrible.
But I'll still never buy that again.
I'll either attempt my own or do something different

Too many zucchini !!!

The recipe called for „ 4 medium ” cut thinly on a mandoline.

I made the ricotta + mozzarella + Parmesan + other stuff + egg filling and put it in a pie shell. There remained enough zucchini slices for another pie . . . and then some.

And so, I made another pie. Zucchini slices STILL left over.

So I soaked them in lemon juice with salt + pepper for awhile. Fried them up in some sesame oil. Gave a splash of honey garlic sauce. Topped with sesame seeds. Very good !!

But now, I am turning green from all this left to eat . . .

Zucchini, its either feast or famine!
I swear this year Im going to plant some and THIS time I want more than one zucchini.

I made a different type of casserole last night.
Chicken cut in bite size pieces. Put in bottom of a casserole dish.
A can of diced tomatoes goes over that.
Mix a box of pre made stuffing mix and some dried basil (it was all I had) with about a half cup water and put the mixture over the chicken and tomatoes.
Topped with cheese.
Cook in the oven (I think it was at 350) for like 25 min until chicken is cooked.
I watched the top and put foil on for the last 6-8 min so it wouldnt burn.
Not bad for a easy dinner.

So thinking maybe tonight I'll try making a frittata. Ive got some bacon in the freezer that I'll take out. Got some taters to go with. Just gotta get some spinach or some other veg and some cream (or maybe I'll use half & half) maybe bell peppers too.
Its making me hungry thinking about it.lol

I just placed my food shopping order( super lazy today after driving 12 hrs yesterday for a visit). I'm being super ambitious this week on actually cooking. I may not make all this week, but will this week into next week.

Corn beef and cabbage
Egg roll bowl
Hawaiian meatballs

I will make little things pasta and such throughout the week, but wanted to make a few things to get me excited about cooking again. Might try fried rice too. I got all the Asian spices and such so it could be fun.

Love corned beef and cabbage. One of my absolute favs.
And you gave me an idea re: the Hawaiian meatballs.
Not sure if its the same type recipe as the one my mom used to make but basically meatballs with pineapple/green bell pepper sauce over white rice?


I think maybe today I'll make a clam spaghetti.
Hub got a giant can of clams, but I think I'll need to buy a few more things.
