Well it's the 4th of July I'm making a pasta antipasto, potato salad, and I bought a beautiful flank steak which I'm going to stuff with fresh spinach and parmesan roll it spear it with scewers and make pin wheels to grill!!!! I've got all the trimmings for a great holiday just miss my Family bad. This was our big go all out family and friends blow out every year. So even if I am alone I'm going to just do what I normally would I invited whoever wanted to come could told them just bring whatever they might drink besides water, soda, or the beer I drink!!! I have all the food covered. I have been stocking up for about 2 months for the 4th just in case!!!LOL

Yeah, we are low key here too. Hub is working today so I'll have a vacation day pretty much alone. Assuming the son will be out and about. He's off today too.




Dang we had a day yesterday.
We finally made an appt to get our car fixed. Its one of the VW recall vehicles with the software cheat for smog.
We had the software part fixed a while back, and now they have to do the hardware part. They said it would be around 4 days.

soooooooo they give us a rental vehicle. We go out to inspect it. I notice a low tire in the front.
They go put air in it.
Now, hub cant drive it because the dl he gave them shows expired, and he didnt bring in the paper he got when he went to renew it last week.
We also didnt have the *claim number* for the fix. We brought in our AAA car insurance and the last paperwork we rec'd from VW. It didnt have the claim number on it.
So I drive home, he takes photos of the paper license and gives them the REFERENCE number.
OK good to go. We drive up to Best Buy for him to look for something he needs for his tablet so he can use it for the gps and mount it on the bus.
He cant find what he's looking for.
I go to get in the loaner and see WHY the tire was low. BIG FAT SCREW in the side wall. (ok not exactly the side wall but on the last tread of near the sidewall)
We bring back the car.
They dont have another, and they have to replace the tire.

So they work up a rental for us from Enterprise.
LOL!!!


Its a gangsta car.
Chrysler 300. Black. HUGE.
I aint driving that thing.


The first loaner we had was ok. It was a 17 Passat. It was automatic so that was weird driving it. I kept putting my foot on the non exsistant clutch.

Good Idea but I cannot get Taco-Shells in Germany at least not at my store... I would have to order those... damn, I know.... But bought some Taco Seasoning last time I was in the US

Mizzy - taco shells are ridiculously easy to make, and to get the shape you can just drape them over your oven racks. Just look for masa harina (corn meal).

Now Im the one trying to figure out what to make for dinner tonight.
I GOTTA use this cheese hub bought before it goes bad.
I want to make cheese enchiladas, but honestly?
Im too lazy.

I went on a last minute trip to the beach!!!LOL I had a blast too much fun to pack into two days!!! I now need a vacation from going on a vacation. I haven't laughed so much in so long. Really was one of the best times I've had since Andy died!!! I'm just physically not fit for the long ass drive and the directions I got were twice as long as they should be!!! But OMG did we laugh!!! I did all the driving there my friend was supposed to navigate, can't tell left from right!!!LOL It's a trip that was just too funny!!!

I freeze cheese all the time!!! I have like every kind I know how to use in recipes frozen as I stock up on it when I hit a sale.

Ive never frozen cheese~
But yeah if I can freeze it.......




Now what to do for dinner tonight. Did pork chops again last night. At least this time I didnt burn them. lol. (i like to refer to it as cajun.......)


guessing I'll do Chicken again. BBQ. Again.
but first I gotta remember to clean up the bottom of the grill.
Needs it badly.
(gas grill......dont want another grease fire in there. Hub did that last time I did chicken)

Did chicken burgers and cob corn last night....you've gotta mix a fat into the chicken for them to be palatable and with a good mouth feel.

Tonight is Sunday dinner with the kids. I will be making ribs, corn on the cob, baked potato, and Strawberry shortcake. When I told my oldest what I was making she did a little face.. So im guessing she remembers the last time I made ribs . But I am giving it a try again. No worries, i have hotdogs just in case!

I so have to correct myself... a few days after your post I went to my local supermarket around my corner and whatdoyouknow... they had a whole section (well, not the American dimensions but about 5 feet high and 3 feet wide) full of that stuff. Shells, sauces, spices.. I'll be so getting some!!

Ive not made tacos in so long. Still waiting for some good tomatoes. My neighbor has some plants in the front yard. She came over with some fresh zucchini the other day, yum. So maybe she will share some of the maters too.

I do and I'm looking for the easiest recipe but as far as I can see it's totally easy.

lol. Thats what I said when watching those food shows on tv.

Its a spicy sauce. The one Ive got is semi mild but I know they have much *fancier* ones in my local grocery store.

I had a few interesting days with my friends and her family down south at the beach. The funny thing is when we went grocery shopping I'm one of those label readers and I don't buy anything precooked or package mixes.LOL She has four kids and she's like look my kids only eat this kind of crap!!! I on the other hand have watched her kids and they will eat healthy if you just fill their plates. Or with the older ones 12 & 14 they can fill their own. I did convince her not to buy too much junk food and she did see how much cheaper it is to cook from scratch rather then buy a family of 6-7 takeout crap!! I just don't eat it because I am not fond of junk food. Sometimes it would be cheaper to just buy a frozen dinner for me but I am just to picky and I like to cook.

I'm totally with you xolady, it is cheaper and healthier to cook from scratch unless you fry stuff. Lately I've been trying to save some money because I keep throwing out food because I buy too much and now I only buy what I need and it's cheaper. I have tried to only spend EUR 10 a day and I even save money... seriously!
