Today it's really crappy out dark cloudy rained all night. So I cut up left over pork and I going to make Fried Rice. It's a great day to stay in and just eat!!! I gave 1/2 the pork roast to my neighbor with most of the potato salad she called to ask what I cooked the pork in she loved it. I just used a balsamic vinegar dressing to marinade it in over night and cooked it on 375 in the oven for 1 hour. Turned out so tender and juicy. I started buying italian dressing mix at Aldi's it's 50 cents a package very good similar to good seasons mix. Any way I'm gonna do fried rice and just sleep the day away, feel like I'm getting sick again, YUCK!!!

I just made tapioca. Hadn't planned on it, but saw the box way in a back corner of a cupboard and after that I had to make it.

Cant wait till sat.....CORNED BEEF and cabbage. All set with it.

Hub bought a tres leche's cake from Costco yesterday. wow. yummy.,

Last night was chicken again. Came out really good. My new *tactic* is putting the chicken thighs on a rack that is in a sheet pan. way better than not doing so. Skin comes out crispy and its not sitting in the fat from the chicken. Dont know why it took me so long to figure that out.

I can't wait for corned beef/cabbage!!! LOL It's been so cold any one pot meal sounds good!! I finally made my fried rice last night, it turned out good. I made a huge pan of it I going to freeze 1/2 for another meal.

gaaaaaaaaaaa
I dont know what to make for dinner tonight.
We had chicken on monday.
Last night I made cheese ravs and baked sweet potatoes.

I know friday I'll be making some fish dish and of course sat is corned beef and cabbage.
But what for tonight and tomorrow????
Was thinking stew, but too much like CB&C

any ideas on a casserole? Or something that I can have for tonight and tomorrow night? (leftovers)
totally out of ideas for dinners.
Of course.....easy please. lol.

Chop one red pepper finely. Mash up as much garlic as you can stomach. Sauté until garlic is almost crisp.

Get ready spinach or broccoli or cauliflower or snap peas or green beans (you get the idea). Cook pasta, whatever sort you want. In the saute pan throw the veggies and a couple of cans of tuna (in oil or water, and the very cheapest tuna) and some red pepper flakes and ground black pepper, oregano/basil if you like, and heat until veg are at your preferred state of done-ness.

put pasta in bowl, pour over the tuna/veg sauce, add lots of parmesan or romano.

Got the corned beef in the slow cooker (thank goodness, hubby is off today and can monitor)
Gave him instructions about when to add carrots and celery and taters.
I'll be home to add the cabbage later.

Happy St. Patricks Day to all!!! I started early I made cole slaw about midnight!!! I just put everything else in the crock pot on low. I am running out to buy another corned beef, they were so cheap and I haven't bought one since last year because of the price. I love leftovers with this. Plus yesterday I hit this great store that has a lot of stuff I can't buy here in GORDO!!! I got Mojo and a pork roast marinating so I can make cuban sandwiches. I'm officially out of my funk!!! LOL Now I have to concentrate on Easter dinner!!!

I Love Cuban sandwiches. It is one thing I really miss about south FLA - Cuban food.
I am getting a corned beef today myself and will have it along with cabbage & potatoes for dinner.

I can't get cuban bread but I use walmart french bread. I make two big loafs and cut them then freeze them. Then take one out and cook it when the mood strikes me!!! They turn out like fresh I don't ever get good food here in any of the so called restaurants.

No Cuban bread here either. Even the few places that claim to serve Cuban sandwiches use a poor substitute.

I just make my own because I know I won't like the pork they sell as cuban it's generally slimy and tastes like rubber.

Well today I am baking cookies for my banker!!! He did me a huge favor and he has a 18 year old with spina bifida (sp) Anyway we were talking about her birthday and she wanted a chocolate chip cake. Anyway we got on the subject of baking and I am going to bake him a bunch of cookies for him and his family. Just such a nice man and I owe him a debt for taking a chance on me and want to show my gratitude in a way that shows I was listening to him when he was talking to me. Corned beef turned out great!! I'm having left overs for breakfast in a few. Gotta walk the princes!!! I bought her a really pretty collar pink with rhinestones and hearts!! I love it I have to show her off to the world!!! At least my little piece of it!!!

Well I am buying another corned beef it was cheap and turned out great. I gave two dinners to my neighbors and they loved it. I went back to the store to buy another and they were out getting them in today!!!LOL Not great for Saint Patricks day but it was to good to pass up another one.

I know what you mean. I should get another one and freeze it.
Been known to make it on random days just cause its so yummy.
Hub cooked ours this yr. He did good!
I did have to finish it off on the stove tho. Crock pot too small.

I had to go buy a new pot mine wouldn't fit everything, so I went to the salvation army store and found two huge pots with lids for $4 & $5 so I bought both!!! Now I have pots to cook just no one to cook for!!!LOL I planned to buy this really nice non-stick T-fal pot for like $50 so I did great by stopping at the thrift store first. I have bought some really great things there for the kitchen very cheap most brand new. I'm a thrift store shopper from way back!!!LOL Andy would die laughing when he'd give me money to go buy something and I come home with 10 things and have change!!!

I still need my pressure cooker. I loved that thing for a fast meal.
Might have to fork over some $$ for another one if hubby doesnt get the address of where to return the old one. lol.

Ok I lost a huge post but anyway I looked at the electric pressure cooker's and I didn't buy one I liked my old one except you can't stop the heat like you can with the old ones so I'm going old school. Any way it's freezing again and I am making pot roast just felt like my mothers cooking!!! LOL Can't remember when she last cooked but she made the best pot roast!!

Me too with the mom's pot roast. so yummy.
She used to ask me when we would come down (when they lived far away from us) what do you want me to make for dinner?
Of course I always say......POT roast! I'll bring the french bread. (its better here than down there....its FAKE french bread)

Well pot roast was great just what I needed. Anyway I had two strange phone calls my sister and then my Mother in law asking if I was okay. I was and then both said they saw on the new about all the tornado's We didn't even get any wind so I was a little wierded out about that. But at least they checked on me!!!

Looks like a lot of trouble to go to, I know many places use it professionally. But I kind of like being able to add stuff as I go. Especially with certain herbs & spice's.
