Ah, so you'd hate my absolute favorite dish - spaghetti with garlic and tuna! Lots and lots of garlic, sautéed til it starts to turn brown, some red pepper flakes, whatever veg you want to put into it (I like it with broccoli or peas or diced carrots) and a couple of cans of the cheapest tuna you can find. Add white wine and more oil and stir. The tuna breaks up and becomes almost a gravy, and the garlic just suits everything.

Now see that sounds good!! My mother used the kind in oil and it always tasted fishy, besides I was a pain in the ass kid when it came to eating!!! I love fresh grilled tuna, just can't afford it or find it most times!!!

I'd forgotten about lent!
I do try to do the no meat thing on fridays too during lent.
Even tho I've not stepped into a church in years.

I do like tuna both canned and fresh. But I dont make it often.
Reminds me, I should have the tuna casserole for dinner some night.
I ended up making chicken.
Im so bored of chicken. I didnt even like it very much. Sort of did a casserole type thing. Bad thing is....there is alot left over.
Hub got home late and he'd already eaten a bunch with his clients. (This group always seem to feed him)

Well I'm waiting for my best friend to get here so we can eat dinner, I haven't cooked yet but its simple shrimp scampi. I was going to do something better but I really don't feel like getting stuck cleaning a bunch of stuff.LOL

I made pork chops (again.....)
But I sort of switched up how I did it.
I mixed together some soy sauce, some sweet chili sauce a bit of garlic and some grated fresh ginger put the chops in a pan, spread the *combo of sauces* over the top and then poured a stale beer I didnt finish on the bottom of the pan.
Cooked them in the oven for about 45 min and ta da....done, yum.
Had some saffron rice to go along and a bit of leftover salad too.

Now ....what the hell am I gonna do today. lol.

That sounds really nice! I have some red chili paste, and some left-over mango chutney might get a similar dish out of those....

I'm making bone in chicken breasts. 1/2 cup mojo, 1/2 texas pete sweet/hot sauce/ adobo seasoning all over!!! We shall see I am trying to vary what I use to season and marinade as I get bored. My friend is still here and I am going nuts all she does is sleep!!! Gets up and makes a freaking mess!!! I have been cleaning like a lunatic, my OCD is in full swing!!!

I also bought some of that hot spicy korean sauce.
Ive not cooked with it or anything yet but omg. Its def hot.
go chu jang.
I hear about it on the tv shows (cooking network or rather food network)
so I had to try it. I just tasted a bit of it and its pretty spicy.

I was actually sort of surprised......I was in target returning something hub bought and thought.....Im gonna check the food section.
Sure enough they had it

I made chicken spinach lasagna yesterday so much work for a two minute dinner!!! I made a huge pan and now I have to portion it out to freeze or I will have wasted hours and money which I can't really afford to waste!!! I hate wasting money as it is I feel like I waste enough just buying household supplies!!!

Sunday dinner!!! I always used to make a huge Sunday dinner but now it's so boring no one to have over. I really miss my family day's like today. I miss having a zillion relatives just dropping in on Sunday because they knew I was cooking a big dinner. I almost ready to give up on living here because its so boring!!!! I actually miss all the chaos of South Florida!!!

I didnt feel like cooking AT ALL today.
I did, but was not into it at all. bbq chicken.
boring. just boring.

maybe tomorrow I'll go to the store and get some fresh veg. Could use some to maybe perk me up a bit

Dumplings in chicken or beef stew are sheer comfort food and in the artic we are having here it’s wonderfully warming.

Simmered! Simmered, not boiled - it is flour and butter.

For the most part when your poor like me you live off boiled flour and enjoy it!!! LOL I have just about every kind of pasta they sell!!! I buy the frozen dumplings way easier then trying to make my own.

Ive only made dumplings like maybe 2 times.
They are ok.
I def like to add chives to them tho.

I never made it to the store yesterday. But for sure i gotta go today.
So when did my days off get so LAZY?!
Last week was pretty rough. Heavy mail all week. bluck.

It rained this am. But now its sunny. I should get myself moving and shower and go to the store and get it over with.
Need veg.

I think most comfort food might be thought of as "budget friendly" and high in carbs. At least the comfort foods I prefer; dumplings, mac & cheese, mashed potatoes, cheese grits.

I've never tried the frozen dumpling, but in the past I have bought the uncooked frozen biscuits and then cut them into 1/4s after they thaw. They are OK, but I find using Bisquick, frozen grated butter & whole milk better. I keep my butter in the freezer for this exact reason. I think the frozen ones might have sugar added and to me they are too sweet.

I also had tons of fresh ground black pepper to the dumplings as well as the broth.

Well, my step-grandmother, who was an Ohio farmer's wife/widow, cooked for her boys, and no-one in the family weighed less than 300 lbs. Getting the entire family into an elevator would blow the weight limits straight to hell, so they'd have to use the freight elevator instead. Anyway, their staple diet was a chicken or two from the yard, gutted, defeathered and simmered with dumplings. Loved the chicken, but .... dumplings.....I just never saw the beauty.

Last nights dinner was yummy!
I thawed out some more of the steaks. There were only 2 (as son was supposed to work late and I never know if he's gonna eat at work or what)
cooked some brussel sprouts in the over, along with some taters, made a salad (packaged...its so good that stuff)
I ended up only eating half of my steak just in case son needed to eat. Good thing.
He was hungry. Since I made alot of taters and sprouts..he had enough to eat for dinner as did I.
whew.
Now......what to do for tonite?

Thinking of cooking some of the mushrooms and maybe asparagus, but what protein?
