Default Yummy chicken soup recipe

I made this about 2 weeks ago.
Thought I would share it. Its also gluten free if anyone cant tolerate gluten (I can but the soup sounds so good, I didnt care!)

Coconut-lime Chicken Noodle Soup
Serves 4


6 oz dried flat rice noodles
3 1/2 cups low sodium chicken broth
2 inch piece of peeled fresh ginger cut into 1/4 inch rounds
1 can (13.5 oz) unsweetened coconut milk
3/4 lb of boneless, skinless chicken breast, thinly sliced
6 tbs lime juice (from 3 limes) 3 tbs fish sauce
2 tsp light-brown sugar
1 jalapeno, thinly sliced
3/4 cup packed fresh cilantro leaves


1: soak rice noodles according to package instructions,drain


2. In a large pot, bring broth and ginger to a boil over high heat.
Reduce heat to medium, cover and simmer 10 min.
3. Add coconut milk to broth and return to a simmer. Add chicken and simmer until chicken is cooked thru, about 3 min. Stir in lime juice, fish sauce, brown sugar, jalapeno and 1/2 cu of cilantro. Cook one min. Stir in noodles and serve topped with the remainder of cilantro.




I added sliced mushrooms, and if I make it again I will probably use less ginger or at least smaller pieces. You could probably add kale if you wanted or maybe even cabbage.

That does sound good and I am working on my grocery list right now. I now grocery shop using the Wal Mart pick-up and it has been fantastic.

Making this right now! Quick suggestions on your ginger problem....either use a microplane or when you slice your ginger, you can whack it with a meat-tenderizing mallet (mine has a totally smooth face) and it almost pulverizes.

Could you make this in a slow cooker?

Isn't the Walmart pick up great! The only thing I've noticed is sometimes the expiration dates are sooner than what I would have bought at the store. If you agree to substitute if they are out they always upgrade you. One time I ordered 12 Kellogg's pastry flats. They were out so they gave me a 36 count at the same price. Another time I ordered one Cornish game hen and they were out of singles so I got a 2 pack.

the one thing I was sort of amazed at......the rice noodles did not get soggy.
I had leftovers and it kept for a few days just fine.
Ive never used rice noodles before.
I just loved the flavor. I'd probably add more spice to it cause I like spicy.
Jalapenos' are not usually too hot for me. (I know some can be but the one I got added just enough heat)
Glad I posted this. Its fast, not too terribly expensive (unless you need to go buy everything. The most expensive thing was the chicken which i already had and the noodles. I chose some flat noodles at the local grocery which tends to be on the high side. Think it cost me almost 5 bucks for the noodles)
