Hi, here they are. I made the mistake of not keeping bookmarks and writing them in a blank cookbook. Excuse if there is bad typing.

Spicy burger
Vegetables, canned stuff & greens :
1 small grated zucchini
1/2 red onion, diced
3 tablespoons cilantro, chopped finely
1 cup quick oats
1 can chickpeas; rinse well to get rid of starch and mash

Spices and flavourings :
1/2 teaspoon salt
2 teaspoons black pepper
1 teaspoon cumin
1 teaspoon garlic powder
2 tablespoons smooth peanut butter [ or another nut butter or substitute for allergies ]
1 tablespoon sriracha or hot sauce
3 tablespoons red wine vinegar
2 tablespoons EVOO

Method :

Mash the chickpeas and then add the rest of the ingredients.
Mix up all the ingredients well.
Form patties.
You can put these on a grill or pan fry. 3 - 5 minutes a side.

These were served with lettuce, tomato, avocado and maybe, some mayo.

Lemony x Tahini Chickpea
Vegetables, canned stuff & greens :
1/2 red onion
1 grated zucchini
1 or 2 lemons : need for 3 tablespoons of juice and a teaspoon of zest [ omit zest if not feeling lemon - y ]
2 cups chickpeas

Spices and flavourings :
1 teaspoon salt
1 teaspoon onion powder
2 teaspoons garlic powder
2 teaspoons EVOO
1 tablespoon Dijon
3 tablespoons tahini
1 cup quick oats

Method :
Mash chickpeas into chunky mixture.
Add rest of ingredients and mix well.
Make patties with your hands.
Pan fry for 10 minutes on each side or until crispy.

Quinoa & Mixed Veg # 1
This quinoa burger recipe came from some Frenchman on television. I found it in a magazine in a doctor office.

Vegetables, canned stuff & greens :
1/2 cup grated carrot
1/2 cup grated zucchini
1/2 cup chopped leek [ white ] or a mellow onion
1 chopped garlic clove

Grains & concrete :
1/2 cup quinoa, rinsed and as drained as possible
1/4 cup bread crumbs
1 lightly beaten egg
1/4 cup EVOO for frying

Method :
Cook the quinoa as per usual directions
In a fry pan over medium heat, soften the carrots, zucchini, leeks and garlic in oil. Add salt & pepper to taste.
Put vegetables then in a strainer above a bowl and remove excess liquid.
Put the vegetables in the refrigerator for 15 minutes.
Add quinoa, bread crumbs & egg to the vegetables.
Makes patties.
Pan fry @ med to high for 2 - 3 minutes or until cooked.

There is a sauce for this ... do you want it too ?

Quinoa & Mixed Veg # 2
Vegetables, canned stuff & greens :
1/2 cup diced red onion
3 cloves of garlic
1/3 cup chopped cilantro
1 cup cooked black beans
1/2 cup cooked red beans

Grains :
1 cup cooked quinoa
2 tablespoons hemp hearts
1 cup rolled oats
2 tablespoons of ground chia seeds soaked in 1/3 cup water

Spices & oil:
1 tablespoon EVOO
1 tablespoon Chili powder
1 tablespoon cumin
3/4 teaspoons salt
1/2 teaspoons black pepper

Method :
In a food processor, toss in the beans, cilantro, onions, oil & spices. Grind until you have a smooth пюре.

Add the soaked chia seeds to the пюре. Then add hemp hearts, quinoa & oats until it is all sticky & stays together.
Form patties.
Preferably, grill until cooked. But can pan fry in oil too.

Do you want the sauce that goes on top with the bun ??

Lemony Lentil
Vegetables, canned stuff & greens :
1 teaspoon minced Serrano or other hot Chili pepper
1 medium onion
2 tablespoons fresh ginger, minced
1 tablespoon garlic, minced
2 lemons for juice & zest

Grains, spices & cement :
1/2 cup lentils, dried
1/4 cup butter
2 eggs lightly beaten
2/3 cups bread crumbs
2 teaspoons mustard seeds
2 teaspoons whole cumin seeds [ use powder, but adjust, if you cannot find ]
1 teaspoon turmeric

Method:
Cook lentils in 1/3 cup water in a saucepan. Add turmeric and bring to a boil.

Drop the heat, let simmer for until lentils are tender, strain and put into a bowl to cool for awhile.

Melt butter over medium heat and add the cumin / mustard seeds until they give out a fragrance.

Add diced onion, ginger and garlic to the seed pan & cook until onions are soft.

Add this mixture to the lentil bowl.

Add lemon juice / zest & salt and pepper. Cool the mixture.

Once cool, add bread crumbs & eggs to the lentil bowl. Throw in the refrigerator for 1 hrs.

Make little slider sized patties. Fry in pan on each side until golden.

Do you want the sauce for this ??

O.K. I have no idea what happened ! When you see пюре, it means purée. Stupid keyboard.

Omg! I just sliced up an avocado. Wrapped each slice in a 1/2 slice of bacon. Sprinkled cumin and cayenne in top. Oven 375 for 30 minutes.

I love Avocado's. I buy fresh when I can but I found a great guacamole that comes in 1 oz size package of 8. I get it and eat it spread on a lightly toasted bagel!!! OMG best breakfast.

We went out last night to a Thai place around the corner.
Hub got spicy red curry w/brown rice.
I got spicy green curry with regular rice and scallops.



Nice change for us. And this time, he paid and I didnt leave my debit card there.

I had beef barley soup. Today I am making a Fresh pork picnic. Don't know what sides yet probably roasted sweet potatoes, Yellow squash w/onions.

I should have planted some because its so expensive to buy.

I made spaghetti squash the other day. I love squashes, but wrestling them to open in a pain in the neck!

Also made pork chops with sauerkraut the other day. My son had four of them!

I started Keto. Today is day 4, so I'm cooking everyday now. Joints feel better. My hands hurt less.

I'll have egg salad today with avocado as the mayo.

You don't have to cut the squash before cooking. I take butternut, rub with oil, can put a little cut or two on top somewhere. Cook until tender, then cut and take seeds out. I have had no problems doing it this way. I don't always rub with oil.

Egg avocado salad

6 eggs
1 avocado
2 tb of sour cream
Two slices of onion finely chopped
1 stalk of celery

Mashed the yolks and avocado together added sour cream. Added the rest. Sea salt to taste.

It's so good!

If you cut the squash (any of the hard winter squashes) and take the seeds out before cooking, then you can pan or oven-fry the seeds with your choice of seasonings (garlic or onion powder, salt, pepper, chili powder, cumin, whatever) after a light spray with oil.

Call them pepitas and use them for snacking or garnishing salad or soup!

My seeds were growing a new plant inside. Lol

I can eat squash in limited quantities because of the high carb content. My son tried it and wasnt a fan.

I love them but I'm afraid I'll stab myself when trying to open it.

"MAC" and cheese cauliflower

Head of cauliflower boiled to fork tender

Sauce:
1/8 of a cup of heavy whipping cream
1 package of cream cheese
Shredded Colby jack cheese

Combined all over low heat. Added a touch of cumintoand cayenne. Sea salt to taste

Place everything into as baking dish. 350 for half hour or the top of the cauliflower has roasted coloring.

It's so good. Rich, so you wont want to eat a ton.

I'm having carb withdrawal, so I'm trying to play with foods and flavors to stay on track.

What a „ terrible food day ” today.

My mom has an old lady Albanian friend. I know her sketchy grand - son ... he asked me for a date once ! The son of this lady had a work accident [ he is o.k. but lots of hrs @ hospital today ] and she lives with son & his family.

My mom told me to make her some thing „ quickly ” for dinner. Other ladies would do other meals. O.K, I looked in the refrigerator & cupboards. Come up with a mixed veggie + chicken pineapple stir fry and then a minted couscous salad.

And then my mother said, „ Make sure you cut the vegetables really small cause she has no teeth .” After it is all done !!! I had to pick out bigger veggies prior to serving ...

And pt 2 of bad food ... There is only one store that I know of in all of North America that had my favourite Bosnian soda pop. It is an American store and I have to order ...

For the last month, my mother told me, „ wait, wait, don’t buy it now. Wait until the exchange rate is better. ” I followed her advice until I checked today ... all sizes sold out ... and no restocking !! It is gone ... so I sat there ... hollow & sad ...

I get to drink a lot on vacation back home ... but ... so sad to come home .. with no more of my drug ...

Made the pork picnic, now I have a ton of left over pork. Been googling pork empanada recipes, I'm leaving for NY for a while to help my niece who had brain surgery yesterday, she doing great just has a ton of responsibilities that right now she's unable to do alone. Like taking care of my sister who has been in chemo and physically is incapable of doing anything right now except get her treatments and all the side effects have made her incapable of even caring for herself. So favorite Auntie is going to baby them both!!! Between the two of them I should have my hands full!!! To say the least when it rains it f-ing pours!!! I feel like my quiet life has been slammed by a hurricane!!! But anyway I want to make some kind of pork meat pie I put the rest of roast in very hot westbend cooker like crock pot but not to cook it down off the bone, 1 cup red wine, 2 TBS Goya Recaito & 2 TBS Goya Sofrito, left over gravy the combo is awesome. Anyway I am either going to go buy pie dough or make it and make up meat pies. (empanadas)!!! Any suggestions I've never made these before? I was thinking I should put green olives but I don't want to ruin the flavor I have right now. I thought maybe dicing some sweet potatoes to mix in plus some hot pepper to give some extra zing and the sweet to balance it? Any ideas are welcome. The reason I am doing this is to use up what I already have on hand, I have 10 lbs of flour so I will most likely make dough. I can freeze these easily.

Way more adventurous than I in the cooking world.


I just did some rice (added saffron and bullion) and grilled pork chops (on the inside grill pan) and some canned green beans.




Im really glad your sister and niece have you to help.


Looks like Im going to have to have thanksgiving dinner for my folks at my house. Or go down to theirs and cook.
Was talking with one sister on the phone and she told me the other one (who usually does the holiday thing with parents) resents having to do so. First off, no one said she had to.
second off....Ive not been invited to her place since hub got out of prison and off parole. Ive seen her new house, but never been inside it. I figure she does not want my hub there. Ok. Thats fine. I understand.
boy this is turning into a rant on that sister I guess. Im just torked off at her at the moment.
She calls me about a month ago.....after I'd told my mom and dad I was going to retire at the end of the year. She has the audacity to ask me.......so what are you going to do with all your free time?

LOL I was the sister that did all Holidays and took care of both grandmothers then my parents. My other sister who lived a few miles from my parents just used them as baby sitters and as an ATM until they died. When I wouldn't play her f-ed up games she started coming in my Dads house and going thru all my stuff, changed locks then she broke in when caught I called police and she tried to steal my keys and tripped and fell, 6 months later she went to police and reported me for assault and battery!!! Needless to say I don't speak to her and refuse to have anything to do with her. She's just pure evil and a nasty drunken whore to boot!!! So don't feel to bad we all have that one asshole in our families!!!

Making New England clam chowder today, one of my absolute favorites!! In the Instant Pot (but not their recipe).

The other day I made delicious pork chops.

Season and brown the chops
Baking dish and top with sauerkraut
Bake at 325 for 2 hours. Soft and yummy

OH my goodness.......I love my cast iron grill pan. Is kind of a bitch to clean but it sure makes good chicken and my pork chops I cooked the other night came out yummy too.


silly me I tossed out or gave away my whole set of those things. Yes, they are heavy.But I would have had a cast iron dutch oven if I hadnt.


A while back I got the grill pan. Only used it like maybe twice.
Then a short time ago, I got the larger pan style, (no grill just flat) Ive used that a few more times.


They are turning out to be my favorite pans to cook in now.

Cast iron is lovely, isn't it? Make sure that after you clean it you dry it over heat. Not long, just to get moisture out of the pores.
