Default Pot Roast for Christmas dinner

omg. I loved this recipe. So simple! I didnt have any beef broth so I used chicken broth and I also added potatoes. I think our roast was almost 4 lbs and we will have it again tonight. Hub raved over it.
Def gonna have this more often. Especially how easy it was. Only thing is this would be a good one if you have the day off as its low and slow. Took about 4 hrs at 275degrees.

I never go by the recipe’s serving sizes. How many adults would that feed? There are 4 of us including my son with a hollow leg lol. Sounds yum-o!!

well there are 3 of us but Christmas night son and I didnt eat. We were too full from other stuff we had during the day.

So hub ate, then last night all 4 of us ate and Im guessing there is still leftovers. Not sure how much tho.

We had friend shrimp and potato salad for Christmas dinner. Nobody but us two, so no sense in cooking a huge dinner.

Ive just always liked pot roast. I made one earlier in the year for the first time and it was good. So hubby asked me to make it for Christmas.
The first time I made it I did it on the stove, rather than in the instant pot like I was gonna.
I didnt recall what site I found the recipe on, or what book I found it in.
So when I saw this one (from Pioneer woman) I thought......lazy me will like this. lol.


I plan on making this more often as its so easy. Since we have a long winter ahead still, I'll probably make it several times. I like how it warms up the kitchen too and makes the house smell yummy.

The recipe above is done in the oven. Low and slow. wonderful, but like I said its good when you have the time to do it.


I'll have to find the one for the insta pot but I have not done one in it. Yet. lol.
