Yes, the stew is called slanutka so it has passed the food inspector aka mom. It is very easy, composed of eggplant, sweet peppers, onion, carrot, chick peas and spices. If I were to make tacos, I would have to ring the priest for an exorcism of the Instant Pot after!

Yes, and I think the priest would agree to the exorcism after he ate a few tacos - while Mom wasn't looking of course.

I am off to look up that recipe up - the last thing I made from you was a huge hit, but all I remember about it was the paprika. I'd forgotten just how much good flavor paprika has.

Do you use dried chick peas? I try to not used canned stuff unless I have to.

I thought to myself that maybe my mother will attempt to cook tripe in the Instant Pot if she sees it works well. I imagine it will take a very much shorter time. Help.....

Yes, I use dried chick peas but if I am lazy I buy canned from a "good" Italian brand. The cans are lined.

That recipe is similar but here, I will share the one I will use.

1/2 eggplant
3 - 4 carrots
2 onions
1 sweet pepper
1 cup dried chick peas
handful of baby spinach
1 tbsp of smooth peanut butter
vegetable or chicken broth
Variety of spices: cumin, dried oregano, dried rosemary, salt and turmeric.

As for instructions / method, I will learn that tomorrow.

Yes, I think Mom's tripe recipe would be far faster in the new toy, but I am not sure if her heart can deal with so much stress. What is these pots are like computers and have those "things" popping up out of them? Tripe is something that requires being tenderized so I really think it would work out well.

Peanut butter! I never would have guess that, but except for the eggplant itself I have everything. Of course, I'd use the entire eggplant - what could I do with the other 1/2?

Ha! I don't know the story about your mom, but I've had tacos that felt like an exorcism before.

I couldn't help myself. I'm making chicken for tomorrow. It's in the pot now. I modified a coconut curry recipe-- it's Greek yogurt, lemon, yellow curry, turmeric, coconut and raisins. Tomorrow I'll pick up cilantro to garnish.

Hah, my mom was horrified by my instant pot. I had to break it down for her that it's just a pressure cooker you have a lot of control over - and pressure cookers have been around since I don't know...the 1800s? There's no "witchcraft" involved, as she put it lol.

I actually use mine mostly for boring tasks like making hard boiled eggs and cooking rice. But I need to start using it to make meals again. Hell, I need to start cooking again, period.

This is the recipe I started with. I swapped some things, though, because I didn't have them. I just checked it and reset it for 10 more minutes because my chicken breasts were super thick.

Update:

Meh. The meat is really tender and shredded very easily. But...
Not crazy about the amount of lemon. Too bitter. Honestly think it would be better to leave it out entirely. But it's not a waste. Tomorrow I'll make Jasmine rice or see if I can find naan at the store.

The story about Mom is central European Moms think anything not native to their homeland - regardless of where they live now - is offal from the devil.

Tacos? Evil. Thai food? Evil. East Indian food? Evil.

You get the idea. ;-)
