Default Fun(nny) Mexican Cooking

I didn't grow up eating Mexican food. But now as an adult-- I'm addicted!!

There is no "intuitive" factor here for me. I don't cook so everything feels complicated until I've done it. And then it feels complicated the next time. What can I say? My talents do not lie en la cocina.

But! My passion for eating really, really good food and saving my budget from complete ruin has forced me to try to learn. This Youtube channel has been amazing. I love this abuelita! Thanks for the link. I know I need a lot of practice before my husband comes home... Lol! I am way too proud to not learn how to cook delicious mexican meals for him. I know he will make fun of me, in a loving way, but fun anyway if I don't and ain't nobody gonna make fun of my cooking. Lol!

I watched her make machaca yesterday while I drank a Coke and sat in my warm house (it was 106 here yesterday). Pretended I was in Mexico.

I just watched the pozole video. Nice and simple. I was raised with dutch traditions and the cooking was simple and mostly basic foods. I lived with my friends abuelita, she was a sweet grandma (I believe the meaning?), and she had homemade tortillas and papas every morning when we would try to rush out the door. Wrapped in paper towels so we would eat. I realized the base for the best cooking was learning the total basics. And from there the rest is just building blocks. I hadn't used chilis much but once I learned that base of blended soaked chilis and water. It was like wow. That was it? The base of the mexican soups I couldn't figure out.
Anyways. Thanks for the link. Still wanting to perfect a few recipes. I love her grace and ease with her hands around the kitchen. She could probably do it blindfolded.
