Default Stuffed Zucchini or Yellow Squash

Since these veggies are in season, I wanted to share one of my favorite recipes.

Ingredients:
2-3 large zucchini or squash- cut long ways and hollowed out (save the insides)
Onion
Garlic
Sausage for stuffing (it is kind of like breakfast sausage)
Bread crumbs
Mozzarella
Parmesan cheese
Butter

1. Hollow the zucchini. Save the insides. I use a spoon to scoop it out.
2. Sauteed the onions and garlic in the butter
3. Brown the sausage. Make sure separate into small pieces as you cook it
4. Add the insides of the zucchini
5. Add bread crumbs and parmesan cheese
6. Add sliced mozzarella to the bottom of the hollowed zucchini. Place the cooked stuffing on top
7. Cook in the oven for about a half hour at 350.

I'm the worst at measurements and eyeball everything. It is really a no fail if you taste as you go and see how you like the consistency of the stuffing.

Wish my zuc's did better this year. Nothing in my garden is growing like I wanted.

Lately Ive been craving some grilled zucchini. (just slice it lenghtwise, drizzle olive oil and a bit of garlic salt or powder and maybe a bit of lemon pepper) and grill it for a real short time (depends on how thick the slices are)

Going to have to try to try stuffed. this sounds yum

Love these both! I am the black plague to any garden. Lucky for me I have a few friends who have kick ass gardens. Funny but none have zucchini just yellow squash. I had to buy zucchini. Will try this recipe looks delish!

Do any of you stuff the squash / zucchini / pumpkin flowers and fry them? So very delicious! And I like to laugh how the male flowers are the ones for eating.

I might be the only Italian who has never made it ate the flowers! I want too.

Some times I think they are too pretty to eat but I go ahead any way! I like a simple stuffing with cheese and herbs. Now, I will have to go pick some and make them!

We made a batch last Wednesday!

I think the my friends make them with a sausage filling; their mom is from Italy and they always have a huge garden.

All this talk of cooking has me on a mission - I am going to the grocery soon and am getting stuff to make gumbo since I was given some fresh okra and green bell peppers.

You have a good gumbo recipe?? I'm dying for a good seafood Gumbo!! Just got some Jumbo Gulf Shrimp got all the veggies just don't have a good recipe.

I am going to sort of combine recipes, but one thing I always do is use butter to make the roux. I have burned roux more than once though so if you use butter be careful.

I also probably make mine spicier than many like and I and using crab, shrimp and sausage. I will put it on Jasmine rice.

How much? I really don't know gumbo except to eat it, and I love spicy.

I start out with about a heaping teaspoon - it depends on how much liquid there is and how much you like the taste of filé. I like it, but often add more as I reheat each bowl as it thickens as it sets.

Also, I cook and keep my rice separate; I do not add the rice to the gumbo, but I am a rice snob

I also forgot to say that I sometimes add bacon fat to the butter for the roux - I think that is the best way especially if you are adding sausage.

It really tastes best the next day, but I am not sure I can wait.

Oh, and thanks to you I am not using celery today. NOLA will probably have a day or mourning, but I just have that smell in my head.
