Ok stuck on what to make for dinners
and its getting boring. I seem to make the same stuff so often. Especially chicken. We get the thighs from Costco (they come in sealed packs of 3-5 pieces in each) and I can freeze it for when I need something to make dinner and dont have to hit the grocery store.
Weve had it bbq'ed, baked, fried, cut up in soups.
then its a taco casserole. Ive been making that too. basically hamburger meat (cooked up first) and add the packaged taco mix (or make your own ) with about a cup or so of water, a can of beans, cherry tomatoes if I got em, small can of green chilies and small can of jalapenos. And corn chips crushed and put in the bottom of the pan first then layer stuff. This last time I didnt use any canned diced tomatoes I used the fresh cherry ones. It was a bit dry but still good.
Stews, steaks once in a while, and omg that pot roast. Once in a while salmon.
Thinking maybe today I'll do a tuna casserole, no...wait. I took out pizza dough I'd frozen so its pizza tonight then tuna casserole for sat.
Anyone else think of any other easy dinners?
The fam loves casseroles it seems, so whats a good one? or 2. Or more? lol.

I wish I knew what to tell you on that one. Husband is working out of town, so I'm not cooking as much. When he is here, he is such a picky eater that it drives me insane on what to cook. I do scour Pinterest a lot for new ideas.

Butter chicken, nachos with the works (i ate this 5 times this week bc it took 10 minutes even with meat), stir fry chicken, calzones (pizza dough) or Stromboli,

You can make chicken davane you need 1lb of boneless chicken 1bag of broccoli 2 cans of cream of chicken soup 1 cup of mayo and some curry seasoning cook everything together bake on 400 for 30to 40 mins it's so good

thanks amber, you just reminded me of another one I like from time to time. A spin off of Chicken piccata (sp?)
basically its boneless/skinless chicken, pan fried (add butter) with a light flour coating, remove chicken and add white wine vinegar and some capers and make a light sauce (you can also add mushroom if you like) and a bit of lemon juice. Then add the chicken back in the pan and drizzle the sauce you made over the chicken.
I love capers so this one is pretty yummy.
(I'd google the recipe because I may have missed an ingredient or two here)
My mom used to make chicken divan often. Her's i think she added cheese to it tho. Cant recall now.

Above dinner can be served over rice or noodles, with a side salad if you like.

Ok stuck on what to make for dinners
- Beef or Hamburger Stroganoff over rice or noodles (Campbell’s Cream of Mushroom Soup has a quick/cheat recipe that I use often)
-Spaghetti, Chicken Alfredo, Chili, Sloppy Joes, pulled pork
-Sloppy Tacos (like a walking taco, it’s taco fixings served over fritos but the ‘meat’ is made with ground beef, spanish rice mix & tomato sauce) I can post the recipe later if anyone wants. I have no idea where my MIL got it 30+ years ago but it’s a HUGE family hit.
-Anything from the ‘Once A Month Cooking: Family Favorites’ Cookbook (It’s freezer meals)  I don’t do a whole month of meals at once myself, but I’ll do double or triple batches of chicken dishes one week, beef or pork another etc. Cook one batch for dinner & freeze the second or third batch for later.
-Anything from my new favorite stir fry site:

Real Chinese take-out recipes from a family with 3 generations of restaurant experience. YUM!
We get the big packs of chicken breasts at SamsClub, or their whole pork loin & cut them down for roasts, chops, stir fry, etc. Same with large beef roasts when they go on sale.

lol, maybe! (for safran)
I dont use them alot but for certain things I do. They can be a good shortcut where things are half home made, half other stuff. I will say this, dont use the lower calorie/lower salt cream of mushroom soup. I thought I was doing a good thing using it (cant recall what I made) because it didnt come out right. It was ok.
I heated up a batch of the Progresso clam chowder and added dill to the soup, plus more canned clams and it was yum for a quick dinner meal. My son likes to eat that with a sour dough roll, hallowed out (bread bowl)

I always have canned soups on hand, but to eat as soup. When I make a casserole type thing I make my own creamed sauce, but I like cooking, have a well stocked kitchen and all too many kitchen toys.
Also, soups are one of my favorite things to make and eat in the winter.

Made an interesting chili the other night. It had butternut squash in it.
Lots of canned stuff too. 1 can each of Black and pinto beans, tomato sauce (I added some green chilies too) tomato paste, cumin, chili powder, can of diced tomatoes, minced garlic and red onion and a 1lb of ground beef. And about a tablespoon of apple cider vinegar.
I totally cheated on the squash and bought some at costco already cut up in chunks.
I just did it on the stove. The recipe made alot so we've had tit 2 nights in a row. Thinking of freezing the rest for use another time.
